simple sweet potato & garlicky greens tacos
as with much of what i cook, these fast and delicious tacos were invented one evening when we were wondering what to make for dinner and i had the foresight earlier in the day to roast a few sweet potatoes. how can you get a nutritious, satisfying, completely yummy dinner on the table in 20 minutes with a fridge full of greens and a few roast sweets? let me tell you…
*roast a few medium sweet potatoes, skins on
*peel the flesh from the skins and smash it roughly with a little salt and pepper to taste. set aside, covered
*wash a large handful of braising greens (1-2 big bunches), and chop them. i love the dark leafy greens best here: spinach, raab, kale, and chard all work wonderfully
*heat a large cast iron skillet over a medium flame and add a generous glug of olive oil
*peel, smash, and roughly chop 3 large cloves of garlic and toss it into the skillet, sautéing for about 30 seconds
*add the chopped greens, a couple of large pinches of kosher salt, and a pinch of aleppo or red pepper flakes. sauté a few minutes, covering if using a green that requires more cooking time, like kale or chard. your greens are done when they’re bright green and tender
*heat enough corn or flour tortillas for everyone to have 2-3
*when ready, assemble your taco with a big smear of smashed sweet potato, a little pile of garlicky greens, and all the toppings below
*serve with grated cheddar, greek yogurt or sour cream, hot sauce/salsa, and chopped cilantro
yummmm!!! so fast, so easy, and so good
thanks for another season together, friends. eat well and be happy <3
